I had the same errors with poppler. I fixed it by copying the
MacOSX10.14.sdk from Xcode 10 into my Xcode 11 installation.

There's no way of knowing if it's the same problem without the full log,
but I doubt it. Poppler's failure to find the SDK is specific to
gobject-introspection. Most ports should be able to use the 10.14 SDK
provided by the Command Line Tools.
