The correct syntax would be:

default_variants +universal

But that doesn't work:

$ sudo port install kernel-tools
Error: Error executing universal: Default universal variant only  
works with ports based on configure
Error: Unable to open port: Error evaluating variants
$

Perhaps you want to do this (as I do in e.g. the isightcapture port):
