Ticket #36492: git-core @1.7.12.2 +subtree : add a variant to support git-subtree

Patch is in the ticket, along with some more detail, but this is basically
to add a non-default variable to install git-subtree alongside git. I tried
to mimic the actions of their Makefiles as closely as I could.
Unfortunately, to generate the manpage, we're required to pull in a bunch
of cascading dependencies; I filed a request with upstream for a more
palatable solution, but added the dependencies in the meantime.
