My source and targets were switched:

post-destroot {
    # link the executables back

    ln -s ${destroot}${prefix}/libexec/${name}/bin/FreeCAD \
        ${prefix}/bin
        
    ln -s ${destroot}${prefix}/libexec/${name}/bin/FreeCADCmd \
        ${prefix}/bin        
}
