 Ok, I'll give this all a test and see if I can reproduce your results.

 Questions:
   * Can you clarify that the issue occurs when port gtk2 is *not*
 installed or do you mean port gtk-doc?
   * What exactly is the offending behavior when it fails?
   * Can you please attach a logfile for the failure?
   * Does this occur when building the current poppler port or after your
 modifications?
   * Any other context information that might be relevant?
