 Update:  I figured out why the symlink in `/usr/local/bin` was there.  As
 it turns out the pygments package for LaTeX has a hard coded path to
 pygmentize in that location.  The symlink is therefore necessary to use
 that package.  I've had to restore that symlink in order to get that
 package working again.
