 Installing zim on Big Sur fails with the message `Failed to destroot zim`.

 I'm using a MacBook Air 2018 with MacOS 11.0.1

 Initially the error message complained about `setup.py` not finding
 `libgdk_pixbuf-2.0.0.dylib`.  After installing `gdk-pixbuf2`, the error
 message changed to (see full log in the attached file)
