 Update: Marcus has created a PR to update many of our ports to use OpenEXR
 3 - including `openimageio` - with only a small number still requiring
 OpenEXR 2.

 Once this has been merged - and we're hoping to do so within the next few
 days, barring any unforeseen issues - we'll tackle updating `openimageio`
 to the latest version.
