While it’s possible I no longer own any Mac that’s capable of running any
of the affected versions of macOS.

I guess it would possible but I’ve not really ever looked into how
portselect works.

Adding those won’t escape +universal problems, usually you’ll be forced to
rebuild llvm/clang as +universal before you’ll even be able to build wine
+universal

Again adding those won’t help escape +universal related problems, the only
way to avoid some of those would be to forgo the use of gstreamer.
Skipping gstreamer really isn’t a good ideal with recent versions of wine
as it’s used for audio/video decoding.
