 The developers of gnuplot clearly indicate
 (http://www.gnuplot.info/ReleaseNotes_6_0_1.html, under "Notes for
 packagers and testers" that X11 is no longer the preferred interface. So
 we removed x11 support from the default package. But you can surely still
 get/create gnuplot with x11:

 port install gnuplot +x11

 That add X11 support to the existing defaults.
