 It’s far from ideal to avoid FFmpeg & GStreamer but there’s too many ports
 that need fixes for arm64, x86_64 universal builds.

 The solution I’m using locally and on macports-wine is the official
 GStreamer packages avoiding needing to deal with this mess but I’m sure
 that’s not a solution that would fly for macports-ports. That’s why the
 Winehq macOS wine packages require gstreamer-runtime installed for all
 users.
