logisim-evolution: update to 4.1.0
Upstream logisim-evolution has moved to a different GitHub repository,
while the port still refers to the old repository. The old repo has
since been deleted, causing the port homepage URL to lead to a 404.
Change the Portfile to refer to the new GitHub repository and install
the latest release (version 4.1.0).
As of version 3.9.0, the location of the built app bundle now changes
depending on the architecture. For example, on arm64 it resides in
build/macOS-aarch64. Alter the destroot phase to account for this.
Version 3.9.0 increased the required JDK version to 21+, so bump up
java.version accordingly. Version 4.0.0 increased the required Gradle
version to 9.x, so use the corresponding gradle port instead of the
gradlew wrapper, saving the trouble of downloading an extra Gradle
binary and patching the build system to use it.
