How do I need if I need a variant?

I know, silly question..  Please excuse my ignorance.

Fo example, I want to install argus-monitor.

The variants are apple_postfix and universal.

I understand universal.. But other variants sometimes confuse me.

Do I NEED apple_postfix variant. Will it work the same either way? What is
the difference?
