How to compile all my package as 64 bit architecture by default ?

If you are on Leopard, edit /opt/local/etc/macports/macports.conf and set build_arch to x86_64, then rebuild (or uninstall and reinstall) all ports. If you are on Snow Leopard or later, that's the default already.
