Thanks. The config.log unfortunately doesn't shed any light on why this check failed; it merely reiterates that it failed.
I see you're on a G4 with Leopard. In case this was something PowerPC- or Leopard-specific I tried on my G4 with Leopard, but it built this version of gdk-pixbuf2 just fine.
Do you perhaps have an older copy of glib2 (version 2.28.8) installed somewhere else, such as in /usr/local? If so, move /usr/local out of the way, clean the port and try again.
