Thanks for letting us know. I've corrected the documentation:

workdir does seem to be an actual variable mentioned in MacPorts base, but it's not one you'd need to use in a portfile these days. Perhaps that used to be different back when the documentation was written. This line dates back to the first revision of the new documentation written 7 years ago:
