Try taking a look at https://dortania.github.io/OpenCore-Legacy-Patcher/

I'll recommend partitioning your HD / SSD into at least 4 parts:
    1) stable macOS
    2) experimental macOS
    3) your user directory
    3) non- programs
!!DON'T!! use APFS for this, but traditional HFS+ GUID-partitioning.
