Variants are typically used to enable optional features; pinentry support thus seems like a natural fit for a variant. What is the implication of having lastpass-cli built with pinentry support? I'm not really clear on what pinentry is.

Variants are still used, where appropriate. Enabling optional features of a program is an appropriate use of a variant, assuming there's good reason not to just always enable the feature. Installing optional documentation is an appropriate use of a subport.
