I had to install pango, cairo and gdk-pixbuf2 with +x11. Then I
could install "gtk3 +x11 -quartz" and gcr without errors. gimp2 is
still building, so I guess it is ok.

I guess it might be my variants.conf, which sets "+quartz". So gtk3
(which was not used before?) got built with the wrong variant.

Strange. And stupid, somehow. But at least it seems to be working now.
