[MacPorts] #57767: py36-graph-tool uses incorrect python version 2.7

I think the decision of what the default python variant should be goes beyond boost. Python2.7 is the default across many ports. If we want to change this, it should be done consistently. My personal preference would be to make Python3.7 the default (I have had “+python37” in /opt/local/etc/macports/variants.conf for a while without any issues).
