Not all ports do, but many do.  gimp and inkscape do, for instance...

If something doesn't work for you, file a bug.  I think it's mostly  
usable now.

It's probably best to start from scratch and put it in your $prefix/ 
etc/macports/variants.conf  MacPorts doesn't support variants in  
dependencies
