I'm not sure how that fits into the deprecation (which is a general thing;
the "+no_" pattern is what's actually deprecated.  In any case, you don't
want to replace, you want to add:  that is, since ports are switching to
using +quartz instead of +no_x11 but +no_x11 is still in use, you want all
three variants in variants.conf:  +no_x11 -x11 +quartz.

will the +no_x11 be automagically transformed in -x11?

No, +quartz means use Aqua (OS X native) graphics instead of X11.  MacPorts
will never use XQuartz or (when present) the system X11.
