How to cross compile Apple Silicon target under Intel Apple computer ?

This PR <https://github.com/macports/macports-ports/pull/9837 <https://github.com/macports/macports-ports/pull/9837>> fixes cmake, for all practical purposes, as these cmake-requiring ports build on BigSur intel demonstrate.

We will wait a bit for Micheal to push, but just go grab it and install it if you like.

the fix, in the end, was as trivial as you might imagine.
