How do I run py-spyder once installed?

It appears you did run the correct thing.

Probably not a bad install anymore than a bad environment assumption, but that could be either the package's or the user's doing.
You might be able to adjust this in Terminal's settings -> "advanced" preferences -> international character encoding. Try creating a new terminal based on those settings and see if it works then.

Most programs don't have a "clicky icon". If you feel one should be made, file a ticket asking for this enhancement---beware: it won't work correctly with the Dock or Finder since it's not a real Mac application bundle. It's just a wrapper that just runs the command line program like you had just done.
